<蒸米>
お米を大釜に乗せ、蒸します。このお釜も、ボイラーも相当大きなもので、湯気でまわりが見えないくらいです。
どれくらいの蒸気圧で何分蒸すか、米によって違うので、それも杜氏が毎日判断して決めます。
